Binagoongan Fried Rice is perfect for day-old rice! Seasoned with shrimp paste and tasty pork, it makes a rich side dish or a complete meal, best enjoyed with chopped juicy tomatoes and tart mangoes.

Since I’m mostly the only one eating white rice at home, I like to steam a huge batch once a week and then portion it out into resealable bags to store in the freezer for future use. Why turn on the rice cooker and waste energy on just one serving every day, right?

Cold day-old rice not only reheats well in the microwave, but also makes a delicious canvas for whatever meat, seafood, and veggies you might have in the fridge. With cooked rice on hand, a satisfying meal like this binagoongan fried rice is just the matter of the minutes.

Used cold, day old rice that has had the chance to dry out. If you’re just starting with cooked rice, spread the rice on a shallow baking sheet and put it in the refrigerator, uncovered, for about 30 minutes to remove the moisture.
Make sure the wok or pan is hot and the cooking is done on high heat to prevent the rice grains from sticking to the pan. To check that the pan is ready, add a few drops of water and if they boil and evaporate immediately, the pan is hot enough to add oil. Swirl the oil to make sure the bottom of the wok or frying pan is coated and the heating surface of the pan is shiny.
Ginisang bagoong (fried shrimp paste) goes best with this dish. You can use already baked stores or make your own. I added instructions for using either “raw” or “ginisa” in the recipe instructions.

Serving suggestions

Bagoong rice is delicious as a side dish or as a whole meal. Serve with juicy tomatoes and sliced ​​green mangoes for a fresh taste, along with fried eggplants.

4   cups   cooked cold rice

rapeseed oil

1/2   kilo   pork belly, finely chopped
1   small onion, peeled and chopped
2   garlic cloves   , peeled and minced
1   chopped Roma tomato

2   tablespoons   of ginisang shrimp paste or “raw” shrimp paste

If using raw shrimp paste

1   tablespoon  of  vinegar
1   teaspoon  of  sugar

For decoration

1   large ripe but the firm Philippine mango peeled and julienned

green onion, chopped
Instructions

Crush the rice by hand until the grains separate and are lump free. Set aside.
Heat oil in a pan over medium heat. Add pork belly and cook until lightly browned and cooked the through.
Add the onion and garlic and fry until they soften.
Add tomatoes and cook mashing regularly with back of a spoon until softened.
Add the “ginisang” (fried) shrimp paste and cook for 1-2 minutes. Remove from pan and set aside.
If using raw shrimp paste, add the shrimp paste and cook, stirring occasionally, for about 3-5 minutes, or until the color darkens and browns. Add the vinegar and sugar and let it boil without stirring for about 1-2 minutes. Continue cooking, stirring occasionally, until most of the liquid is absorbed. Remove from pan and set aside.
Heat a wok or wide pan over high heat until very hot. Add 1 tablespoon of oil and swirl on the bottom of the frying pan and heat the oil until the bottom of the pan looks shiny.
Add the rice and spread over the entire cooking surface of the pan for about 45 seconds or until the grains begin to sizzle, then turn to break up the pieces with the back of a spoon.
Spread the rice again on the surface for about 45 seconds, then turn to distribute again. Repeat a few times until the rice is lightly toasted and heated through.
Add the pork and shrimp paste mixture. Continue to cook, stirring gently, for about 1-2 minutes until the rice is coated with the shrimp paste and warmed through.
Transfered to a serving platter and Garnish with thejulienned mangoes and chopped green onions. Serve hot.
